This Blueberry Cream Cheese Recipe could be made into muffins or loafs. It’s a moist delicious variation of ordinary blueberry muffins your family and friends will enjoy. It’s great for breakfast, brunch, an afternoon snack with coffee or tea and as a dessert. This is definitely my kind of recipe. . . for any time of day or evening — even a midnight snack. The only problem with this recipe is that it does taste better the next day . . . but it never stays around that long.
BLUEBERRY CREAM CHEESE BREAD
Recipe Yield: 1 large loaf or 4 mini loafs
FOR THE BREAD:
1 stick of softened butter
3/4 cup sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
2 whole eggs
1 1/2 cup all-purpose flour
2 teaspoons baking powder
1/3 cup milk
2 cups blueberries
FOR THE FILLING:
8 ounces softened cream cheese
1/2 cup sugar
1 tablespoon flour
1 whole egg
Directions:
Preheat oven to 350 degrees Fahrenheit. Grease and flour one large loaf pan or four mini loaf pans. Set aside.
Let’s begin with making the filling:
In the bowl of a stand mixer, cream softened cream cheese, 1/2 cup sugar, 1 tablespoon flour, and whole egg. Set filling aside.
Now for the bread:
In another bowl cream together butter and sugar until light and fluffy (about 3-4 minutes). Add salt and vanilla extract. Add eggs, one at a time, beating well after each addition.
In yet another bowl, whisk together flour and baking powder.
Fold in half of the dry ingredients into butter-sugar mixture, then add milk, then the remainder of dry ingredients. Toss blueberries in a tablespoon of flour and fold into batter. Your batter will be thick.
Spread half of batter into the bottom of prepared loaf pan(s).
Spread cream cheese filling on top.
Spread the remainder of the batter over cream cheese.
Bake in preheated oven for 30-35 minutes (for mini loaf pans) or 50-55 minutes (for large loaf pan).
Allow to cool in pan for at least 20 minutes before removing.
Serve and enjoy!
Wrap leftover bread in plastic wrap and store in refrigerator.
The recipe is a bit involved, but well worth the effort. I do enjoy the mini loafs. They’re great to give as gifts. You may want to make a large blueberry cream cheese loaf to serve and another batch of mini loafs to give to family and friends.
I’m not a great photographer, but practice makes perfect and I have the best model. Little Diva arrived Thursday, March 12, 2015. It was an exciting day. I introduced her to my friend Julie in a Google+ video chat. She was glad her long trip was over and she was delivered in my arms by 2 PM PST. It was a long day for her. She snuggled in my arm and took a little snooze. Then she wanted to eat. So, of course, I fed her. She was a hungry girl. Then some water and a nice romp outside and she was ready to explore her new home.

Yes, I know she looks like she has a plant growing out of her head, but I assure you she doesn’t. The lighting and background aren’t the best, but you do what you can with what you have available with lighting and a safe work space. Diva is being cooperative and indulging my whim to take pictures.

Diva is a little tired from her romp in the backyard and telling the neighbor it was time to stop their party making. She tore off barking, then came back very satisfied with herself.
To tell you the truth, I think she got a little scared (as did I) by going out in the night with such a burst of energy.
Diva doesn’t have her top knot today. We decided to be a bit casual, but when I got the camera out she wasn’t too happy to be photographed with a flat head . . . but she positioned herself in front of the vase so the flowers would substitute for her top knot . . . or she was trying for moose antlers. I don’t know for sure, but the next pictures need to be a lot better if I’m to satisfy my little Diva.
I’d like to thank Yvette, Diane and Jerry for getting Diva safely to me. Diva is a Firebrand Yorkie from http://firebrandyorkies.com and Pacific Pet Transport picked Diva up and brought her from LAX to my door. It was a busy, exhausting day for Diva, but she arrived safely and happy. I couldn’t be more delighted with my beautiful Diva.

Easter is just around the corner. It will be here faster than you can say “Easter Bunny.” It’s always good to be prepared. That’s why I have this wonderful free Easter Basket printable for you. Print it out on your printer using cardstock, follow the assembly instructions, add a ribbon, tissue paper and some candies and hard boiled eggs and you’re all set! This is great for fund raisers, church functions and family get-togethers. It’s always fun to be prepared.
Be sure to print out plenty of these. They make wonderful decorations to brighten up any corner in your house to give it that spring Easterly feel. Young and old love having an Easter Basket full of sweet treats!
Spring is all about planting . . . and Easter eggs . . . well eggshells at least. These are adorable and would look great on your kitchen window sill. They’d get plenty of light and you’d have fun with these herbs as they begin to grow. Just put some googlie eyes on them and add a goofy expression and you’ll have an original eggshell herb garden to brighten your kitchen. You might as well name them, too.
You can get all fancy with egg cups or use the egg carton, but when you give them as gifts I’d go all out with the egg cups. Just empty out your egg shells and put in potting soil and herb plants. I go with the plants instead of the seeds, but you can begin with seeds.
This is a fun activity for the kids, too.
And I wouldn’t stop there. How about some flowers or succulents?

That should be enough inspiration for you. Whatever you can hollow out would work nicely. Have fun and think outside of the box. I’m sure you’ll come up with some wildly creative ideas for planting herbs an succulents.
I enjoy making easy bite size recipes. This is great for a quick snack and also for parties. It allows you to have after school snacks for the kids, too.
Let’s get started!
Ingredients:
1 can (16.3 oz) Pillsbury™ Grands!™ Flaky Layers refrigerated original or buttermilk biscuits
1 lb lean (at least 80%) ground beef, cooked or 16 frozen (thawed) cooked meatballs
1 block (8 oz) Cheddar cheese or cheese of your choice, cut into 16 cubes
16 slices bacon
Long toothpicks or skewers
Canola oil for frying
Feel free to add or delete ingredients
Directions:
Separate dough into 8 biscuits, then cut each biscuit in half. Press into 3 inch diameter circles.
In the center of each piece of dough, place 2 tablespoons cooked ground beef (or 1 meatball) and 1 cube of cheese. Wrap the dough around the beef and cheese and pinch seams to seal.
For the Fried Version: Wrap each stuffed sealed bite size cheeseburger with 1 bacon slice. Secure loose bacon with toothpick by inserting it through bacon and halfway into the burger piece. In 3-quart heavy saucepan or deep fryer, heat oil to 350°F. Fry each piece for 4 to 5 minutes or until dough is golden brown on all sides. Place on paper towels to cool. Repeat with remaining pieces. Serve warm with condiments of your choice.
For the Baked Version: Heat oven to 400°F. Place bacon on foil-lined cookie sheet with sides. Bake about 8 minutes to partially cook bacon. Wrap each stuffed sealed bite size cheeseburger with 1 slice partially cooked bacon slice. Place bacon wrapped dough 2-inches apart on two foil-lined cookie sheets with dough seam side down. Bake 13 to 15 minutes or until golden brown. Serve warm with condiments of your choice.
