This is S’Mores Season for me! Anything s’mores is a definite winner as far as I’m concerned . . . and a s’mores pie, a whole s’mores pie for family and friends to enjoy . . . priceless . . . and a skinny s’mores pie? Is that even possible? Yes, yes it is!!
Well, let’s get started with this recipe!!!
Skinny Chocolate S’Mores Pie
Ingredients: (These ingredients are for a sugar-free or low-fat pie, but since you’re making it, make it as you like)
- 8 sheets of finely ground low-fat Graham Crackers
- 4 tablespoons of melted light or regular butter
- 6 ounces fat-free cream cheese
- 4 ounces low-fat cream cheese
- 2 tablespoons cocoa powder
- 2 tablespoons of your favorite non-sugar sweetener — less is more with some sweeteners
- 2/3 cup of low-fat chocolate coffee creamer
- 8 ounce tub of fat-free whipped topping
- Marshmallow Ice Cream Topping for garnish is optional
- Hot Fudge or Chocolate Ice Cream Topping for garnish is optional — sugar-free or regular
Directions:
- Mix up the graham cracker crumbs with melted butter in a small bowl.
- Press into a 9-inch pie pan. Freeze until you’re ready to fill it up.
- Get out the mixer with the paddle attachment and beat the cream cheese until smooth.
- Beat in the cocoa, sweetener and coffee creamer.
- Gently fold in the whipped topping.
- Bring out your pie shell and pour the ingredients into it.
- Freeze for at least 4 hours or overnight.
- Bring your pie out of the freezer and drizzle with the marshmallow and chocolate ice cream toppings before serving.
- Wait about 15 minutes before serving.
There you go! It is basically a skinny chocolate s’mores pie with some sugar added. I don’t mind some low-fat ingredients, but I don’t like the non-sugar sweetener. This is just my thing. You make your pie however you wish. That’s what’s great about recipes. You can do it your way.

Summer Sundae Recipe
You Can Make At Home With The Kids!
It’s great fun to have the kids create their very own summer sundae from the variety of goodies you’ve gathered for this festive treat.
Some ideas or ingredients:
- vanilla or any flavor of your favorite ice cream
- caramel corn like Cracker Jacks or whatever you like
- crumbled up cookies of your choice
- small chocolate candies of your choice
- red or black licorice cut up in bite-size pieces
- you may like to use an ice cream syrup of your choice
- whipped cream is optional
- anything else you may like such as fruit to add to or substitute for
It’s doubtful you’ll need directions, but since I’m saying it’s a recipe, I’ll get it in the right format:
- Get out a bowl, glass or jar.
- Drizzle some ice cream syrup down the sides of the container.
- Add some crumbled up cookies, caramel corn, small candies and licorice to the container.
- Add a scoop of ice cream.
- Put some more of the ingredients on top of the scoop of ice cream.
- Add another scoop of ice cream.
- Put some more ingredients on top.
- Drizzle ice cream syrup on top.
- Add a spritz of whipped cream.
- Get out a spoon of your choice and begin eating.
You can have a single scoop, a double or even a triple . . . it’s your sundae and your family treat.
I do like recipes that work for all occasions or no occasions. This is a great treat for your family game night or family movie night or just family night.

I went out the other day for a hamburger at my favorite fast food place. I was disappointed and thus unsatisfied. Not only was the meal more expensive than the last time I went plus the gas to get there . . . I would have been much better off making something at home. But for some reason I craved fast food and bought into the convenience angle. I’m thinking more about the quality, now, or lack thereof.
I was on “live chat” with my internet marketing group and one disappointed member was ranting about a different fast food place that didn’t get the order right, plus what she received wasn’t all that great. Sometimes it isn’t worthwhile to drive back and get what you want and return what you don’t.
I’m not going to rant about fast food. I’m just saying the quality may not be what you remember from a previous visit. And I’m talking about just two particular places that I’m not going to name. You and your friends and family may have had similar experiences or your favorite fast food establishment is all right. It may all be a matter of perspective. Or the fast food place was having an off day. I remember going to one awhile back that everyone was saying had excellent food. I didn’t agree. I felt it was a wasted trip . . . but I did learn not to go back. It’s not about what others like, it’s about what you like. And right now, I’m liking what I make at home much better.
This should probably be a great opening for a recipe. I’m thinking about it. Something cool and delicious for summer.
Lettuce Wrap Chicken Club Sandwich
The really cool thing about this sandwich is that you can wrap it up in a lettuce of your choice and put in the ingredients you want . . . wrap it up and eat it or use a fork and eat it as a salad. You can use a salad dressing of your choice as well. It’s something different and quite refreshing.
Ingredients:
- Cook and dice a chicken breast
- 1 diced tomato or you can use cherry tomatoes
- 1/2 of a diced up avocado
- 2 cooked slices of bacon, diced
- 2 iceberg or romaine lettuce leaves
- salad dressing of your choice
- ground pepper to taste
Add any other ingredients you want or remove ingredients and replace with other ones.
Directions:
- Cook your chicken and bacon before beginning.
- Dice up all the ingredients.
- Set out your lettuce leaves and fill them up.
- Top with your favorite salad dressing.
- Fold your lettuce around your ingredients and you’re going to have a refreshing taste sensation in your mouth.
- I did forget to tell you to have it on a plate and have a few napkins handy.
- Enjoy!!
You could use a cheese of your choice or maybe some vegetables. I like having some grated carrots on top, but you can decide what would be best for the look and taste of your “sandwich.”

It seems we can’t get our fill of the delightful summer treat S’Mores.
I’m always on the look out for easy recipes that I can make all year round . . . then pretend I’m out camping while sitting in front of my fireplace.

S’More Bars Recipe
Ingredients:
- 1-1/4 cups of all-purpose flour
- 3/4 cup fine graham cracker crumbs
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup softened unsalted butter
- 1/2 cup packed light brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 extra large Hershey Milk Chocolate Bars
- 1 7 ounce jar of marshmallow creme
I know what you’re thinking . . . what’s with all these ingredients? All you need are graham crackers, chocolate and marshmallows, but marshmallow creme is a good touch. I’m right there with you. What’s with all the sugar? But instead of fighting the recipe, I decided to follow it — can you imagine? Anyway, stay with me . . .
Directions:
- Preheat your oven to 350° F.
- Butter an 8 by 8-inch baking dish.
- In a mixing bowl whisk together the flour, graham cracker crumbs, baking soda and salt for a whole 20 seconds and set aside.
- Get out the good electric stand mixer and put in the paddle attachment.
- You’re going to blend the butter, brown sugar and granulated sugar together until creamy.
- Mix in the egg and vanilla extract. It will smell yummy.
- Set the mixer speed to low and slowly add in the dry ingredients and mix until combined.
- Divide the dough in half.
- Put down a layer of parchment paper and butter the paper lightly, then press one half of the dough into the baking dish you prepared.
- Lift it out. That’s right lift it out and set it aside — this will be the top layer of your s’mores bar.
- Now, since this parchment paper thing was so easy, I buttered my pan again and set a layer of parchment in the pan and lightly buttered it before pressing the other half of the dough into the baking dish.
- You have a mixture of the bottom layer of your s’mores bars and the top layer set aside ready to use after you put in the filling.
- Place the chocolate side by side over the dough layer in the baking pan.
- Next comes the marshmallow creme that you’ll want to spread evenly over the chocolate.
- Now, this may be a bit tricky, but I’m sure you can do it. You’re going to take the saved dough on the parchment, gently flip it over on top of the marshmallow creme. Fit it in place carefully, not to mess up the marshmallow creme. You did it, right? Right? Hey, where’d you go?
- Bake in your preheated oven for 27 to 30 minutes until it’s a light golden brown.
- Pull up the parchment paper to get it out of the pan and let it cool completely on a wire rack before cutting into squares.
- I like to keep it on the paper and transfer to a cutting board, cut into squares and gently lift onto a plate for serving.
They’re delicious, right? This dough does add something special to the old fashioned way of making s’mores. You don’t lose your marshmallows either. It’s all smooth and oozes the delicious chocolate and marshmallow blend.

Coffee Cake has always been a favorite of mine!
My friends think I bought this coffee cake from the fancy coffee house . . . I told them I made it, but if they don’t want to believe me . . .
Let’s see if you have the same problem . . . It’s absolutely too good to be homemade . . . I thought homemade was always better . . . it’s less expensive and makes my family and me very happy!
Let’s get this recipe together so you can have it this weekend for your family.
Best Coffee Cake Recipe
Ingredients:
- 1 Box Yellow Cake Mix plus the ingredients on the back of the box — now that seems easy enough
- 2 sticks of cold salted or unsalted butter
- 2-1/4 cups of flour
- 1-3/4 cups of brown sugar
- 1-1/2 tablespoons of cinnamon
- 1-1/2 tablespoons of vanilla
- Powered sugar for dusting your coffee cake
Directions:
- Preheat your oven to 350° F
- Make the cake in a large bowl following the directions on the box
- Spray a 9″ x 13″ pan with non-stick spray
- Pour the batter into the pan
- Bake at 350° F for 15 to 20 minutes or until the center has barely set
- While the cake is baking, prepare the crumb topping.
- In a large electric mixer bowl combine the butter, flour, cinnamon, brown sugar and vanilla until it is crumbly
- Get the cake out of the oven and break the crumb topping into marble size pieces with you fingers and sprinkle over the top
- Put it back into the oven and bake for another 10 to 15 minutes — the topping will begin to look like part of the cake
- Let cool fully before dusting with powdered sugar. Dusting works best using a sieve
- Cut into squares and serve
It’s easy and the absolute best coffee cake I’ve had in a very long time.

At three in the morning some neighbor decided to shoot off fireworks. It accomplished two things. It woke Diva and me up and it upset Diva. . . well, I’m not thrilled by this early celebrator. This is not going to be good.
I was in a hang-out last night with my internet marketing group. One person was commenting about how unhappy his dogs were. There were fireworks going off in his neighborhood last night. And his dogs are all much older than my precious Diva. They were hiding out to get away from the noise.
One thing I can say about my little girl, she is brave. She has let it be known that she didn’t appreciate having her sleep disturbed by such nonsense. I was surprised other dogs in the neighborhood weren’t protesting. They must have hidden out. Or slept through it. We’ll have to wait and see how the day and night progress.
As long as I’m up, I guess a recipe is in order. I do wonder what would be appropriate for 3 in the morning, but I’m sure I can stir up something.
I am feeling like eggs. Some nice fluffy scrambled eggs. This is a good I was awakened at 3 in the morning by fireworks breakfast. Yes, I think these scrambled eggs would be excellent on toast or an English muffin . . . or even a bagel.
3 A.M. Impromptu Breakfast
Let’s get the ingredients gathered:
This recipe will serve 3 or fewer, depending upon how hungry everyone is. If you need more just double the recipe.
- 6 large eggs
- 3 tablespoons of diced butter
- 2 tablespoons of sour cream
- salt and pepper to taste
- 3 chives or green onions
- 3 slices of the bread of your choice or English muffins or bagels
Now to put this recipe together:
- Break the eggs into a cold pan, then place on the lowest heat.
- Add half the butter.
- Stir continuously to combine the yolks with the whites.
- When the eggs begin to set, add the remaining butter.
- The eggs will take approximately 4 to 5 minutes to scramble. You’ll want them to be soft and lumpy.
- You can now toast the bread, muffin or bagel.
- Add the sour cream, salt and pepper at the last minute. Then top with chives or the green onion.
- Put the toast on the plate and pile the scrambled egg mixture on top and serve.
This was easy enough, even at 3 in the morning. And it is so very delicious!
